How to really use Amazon Textrac

I work in international education, and we are trying to use Textrac to extract course names from transcripts to make our process simpler.

We have been using the built in built in document analyze and it basically does what we need it to do. The biggies issue is the extra ' in front of a course name. I am assuming this is due to everything going into a csv file. So I have no programming skills to save my life. So i am not sure where to start.
