There's no specific limit for the length of environment variables, but as noted in https://docs.aws.amazon.com/codepipeline/latest/userguide/action-reference-CodeBuild.html#action-reference-CodeBuild-config there's an overall limit of 1000 characters.
When you enter the name, value, and type for your environment variables configuration, especially if the environment variable contains CodePipeline output variable syntax, do not exceed the 1000-character limit for the configuration’s value field. A validation error is returned when this limit is exceeded.

Thank you for that! I interpret the docs as saying the "value" field for each environment variable cannot exceed 1000 characters.
For example, could I have three environment variables, each with a 900-character value?
