I want to know the stats of each email sent, i.e. open rate, click rate, bounce rate, unsubscribe rate etc, I also want to download or export data for each cases

Is it not enough to see what you can see from CloudWatch metrics?

I thought you might be able to check it on Amazon SNS.

You may also be able to check from Virtual Deliverability Manager.
