You can use SNS to handle bounced emails. There is an article here in re:Post that describes the required configuration.

Actually, we are using SNS for bounce notifications to our system. However, the emails I described are still being sent. So the question remains how can we control and manage them. They are being sent out automatically, is there a way to disable or configure them?

Brian, have you notice any correlation between the "from" or "reply-to" address setup in the original email and who receives the undeliverable email notification?
The undeliverable notification is going to the "from" address.
The notification email has the following in it.
Diagnostic information for administrators: Generating server: a9-244.smtp-out.amazonses.com
