With HTTP APIs, is there a way to customise the response sent back in errors from the API GW itself - i.e. is there an equivalent to Gateway Responses in REST APIs?

Changing API Gateway errors is currently not supported. You can use response parameters to transform the HTTP response from a backend integration before returning the response to clients. You can modify headers or the status code of a response before API Gateway returns the response to clients.
