I think you could use AWS SES and programmatically define a source when sending emails. See references:

Thanks for you response. We are using the Journey Email Activity in Pinpoint to send emails. Under this we can define a default 'send from' email for each journey but not based on the end point attributes. Looking to solve this issue.

Oh apologize then. Not very familiar with that product, but would this help? https://docs.aws.amazon.com/pinpoint-email/latest/APIReference/API_SendEmail.html It is kinda of similar of what I suggested above but for pinpoint. Or are you looking for something in the AWS console?
