Greetings, I was able to get a workaround that helped me a ton with this. In order to serve up a "KIOSK" environment, I went ahead and REMOVED Firefox, as well as created a Windows firewall rule to block all outbound traffic from IE (effectively making it a KIOSK environment) as well as some GPOs to harden the system and blocking CMD prompt, powershell etc. I hope this helps someone in the future!

Before getting into the technical, I want to point out to you that running Office 365 Windows Apps in AppStream 2.0 may be non-compliant with Microsoft Licensing rule.
Beginning October 1, 2019, on-premises licenses purchased without Software Assurance and mobility rights cannot be deployed with dedicated hosted cloud services offered by the following public cloud providers: , Amazon (including VMware Cloud on AWS). Work with your Microsoft partner or account team for help in this scenario. If you have questions, please contact your Microsoft representative.
This is a known issue and is pending a fix from Microsoft (no ETA).
As a workaround, you can use your fleet in Desktop view and login to your Microsoft apps.
