Afraid DNS Does not work like this.
To have a subdomain, you require NS records for a SubDomain not a CNAME. Then you need a DNS Server thats authoritive for the subdomain. It could be the same name server that is auth for your top domain depending on its configuration.
Once DNS is setup for your Subdomain, then you can create a MX record in your sub domain...
You could try creating NS records for your Subdomain to point back to the same name servers you have for the top level domain and then create your MX record in the same name server ensuring your MX record is for mail.example.com
EG NS Records for example.com would point to dnsserver1.godaddycom NS Records for mail.example.com would point to dnsserver1.godaddycom
