I want to list all phone numbers in my Connect instance and the Contact Flow that they are connected to.

I don't see an API for that. You can get all phone numbers https://docs.aws.amazon.com/connect/latest/APIReference/API_ListPhoneNumbersV2.html, but there's no end point that gives you the association.
