Hello Devin,
From the Route53, there is no such option to retrieve/see the previous value of the record. However, you can use the Cloud Trail to view the any changes happened to the Route53 records.
Back in days, I think I have used the following event name "ChangeResourceRecordSets" to view the change logs. https://docs.aws.amazon.com/Route53/latest/APIReference/API_ChangeResourceRecordSets.html
