Currently you cannot customize maintenance window. If/when you get notification about scheduled patch/maintenance, you can open support ticket to reschedule/postpone.

Yes, it is possible to customize the maintenance window for Amazon MSK (Managed Streaming for Kafka). You can do this by specifying the desired maintenance window when you create a new MSK cluster or by modifying the maintenance window for an existing cluster using the AWS Management Console, AWS CLI, or SDK. The maintenance window is a weekly recurring window of time during which Amazon MSK can perform routine software and security updates on your cluster. The maintenance window can be set to a maximum of 7 hours and must be set to a time when your cluster is not in use.
