Hello there,
Thank you for the detailed steps and for trying some of the ways to get rid of the 3rd ip. In general, the cluster control plane is provisioned across multiple Availability Zones and fronted by an Elastic Load Balancing Network Load Balancer, you should be only seeing 2 IPs of API servers.
If you are still facing issues, I would request you to work with AWS Premium Support to have it fixed. EKS Service Team can take a deeper look into why the third IP is still showing up in the Control Plane.
