Hi,
When sending mail to invalid/non-existing email addresses, the bounce messages come the receiving server (if there is one). If you send an email to a valid domain with an invalid/non-existing user, the receiving server (like Gmail in your test) will reply quickly informing you that the email does not match an existing user. When you send an mail to an invalid/non-existing domain the sending server will try to deliver the mail for some time. This to cover the case that the receiving mail server is down for some reason. The sending server will give up after some time and return a bounce to the sending user.
For the SES statistics, when using WorkMail mail is sent via the WorkMail account so not statistics will not show up in your account.

How can I reduce/adjust the time the server will try to deliver the mail?
This value cannot be configured for WorkMail. When attempting to deliver an email, Amazon WorkMail via SES will continue making delivery attempts until receiving a successful response, or until 840 minutes (14 hours) elapse.
