"Numbers and flows" and "Contact flow modules" not showing in edit security profile

Are you perhaps referencing old documentation? It would appear that the "Contact flow modules" permission is likely the same as "Flow modules".

In my view, I also have "Channels and Flows" and "Flow modules" instead of "Numbers and flows" and "Contact flow modules". Sometimes AWS changes how they name things (like when CTR Contact Trace Records were renamed as simply "Contact Records")
