AWS Amplify powered mobile app in offline mode

I am creating a mobile app where users are possible to stay offline for days. I have started using the AWS Amplify stack and I would like to be as certain as possible about if I should rely on AppSync during the offline mode to make local queries, event after days of being offline. Another option would be to go with the REST API option and create local persistence.
