Does Elastic Beanstalk require the use of a Default VPC? Is there a way around that (specifying a non-default VPC instead?)

It doesn't require the use of a Default VPC. You can choose any VPC.

This is the step in the process when you create an environment via the console wizard where you can then choose the VPC : http://docs.aws.amazon.com/elasticbeanstalk/latest/dg/environments-create-wizard.html#environments-create-wizard-vpcconfiguration

But your stupid Elastic BeanStalk solution is asking for a security group from the default VPC when the elastic beanstalk was created inside a customized VPC
