It's a very interesting question you have and I apologize if this doesn't correctly answer it upfront. I checked the support documentation for AL2023 and it doesn't appear to support GUI.
Amazon Linux 2023 is cloud-centered and optimized for Amazon EC2 usage and currently does not include a graphical or desktop environment.
I found a reference to MATE in the AL2023 version comparison and the release notes though which is interesting.
