Hi all, am new to AWS and have an ec2 server and 3 workspaces. Been running for 8 months or so. Our data usage was around 30Gb a month, in JAN it jumped to 1900GB. and is already at 228GB for FEB. How can i find what is using all that data?

Turn on VPC Flow Log: Logging IP traffic with VPC Flow Logs. Then use Athena to query that data.
I'd also recommend enabling GuardDuty just in case there is something amiss in your VPC.
