This will probably be a good and fun learning experience for whoever participates but as we all probably know from AAA titles.... games made by committee are usually terrrrrible.

I suggest making a game with as many mechanics as possible. That is, a game like GTA 5, but with a much smaller location, and with a well-developed AI.
