Is there something happening with API Gateway access logs?

At about midnight of 13 Dec, 2021, the access logs for our 4 API gateway stages all stopped being added to CloudWatch. The settings for each of the stages indicates that access logs are enabled.

This wasn't a problem with AWS. Someone in our org removed the IAM role set up for API Gateway to send logs to CloudWatch. They thought it should be removed because it's a name used as part of a tutorial. This affected all of the stages deployed simultaneously, since they all use the same role to send log entries.
