Redirected Printing from local macOS Sonoma not working: Unsupported document-format “application/postscript”

Local client: Macbook Air running Sonoma
WorkSpace Host: Server 2016 based
Printer: HP OfficeJet 5255

Behavior: Printer is visible in the WorkSpace, but print jobs fail.

Relevant log entry with advanced logging: Failed to start print job with:Unsupported document-format “application/postscript”.

There is no compatible printer driver for Server 2016, so advanced printing is not an option here.

Is there a way to change the default fall back driver for PCOIP?
I saw a log entry about it once but was never able to find it again.

Got this working temporarily by switching the driver for the redirected printer from the default MS Publisher Imagesetter driver to Microsoft Print to PDF, but this setting reverts on each new login. I'm not sure if there's anything we can do to resolve aside from trying to script the driver change at login.
