The three CNAME records (which it sounds like you may have temporarily removed) are used to prove to SES that you own your domain and are authorizing SES to send authenticated mail using your domain in the From header of your messages. Removing the records will cause the domain to become unverified.
After adding the DKIM records back to DNS you may need to wait for a period of time that is greater than the TTL (Time to Live) for your NameCheap DNS records. Go to the SES console and switch to the region in which you have verified your domain identity. Navigate to 'Verified identities', click on your domain identity, and then to the right of 'DomainKeys Identified Mail (DKIM)' click the 'Retry' button.
If the domain fails to verify, please contact AWS Support to allow them to help you troubleshoot.
