S3 Bucket Date of Last Interaction

I'm looking at the utilization of my S3 buckets in an account, and would like to know if there is a good way to look at the date of last interaction across all of them.
The intention is to find these under-utilized or non-utilized buckets and make some decisions around what to do with the data. I'm already using intelligent tiering with these which does help somewhat, this would be a manual evaluation process though.

Take a look at S3 Storage Lens. You can filter on active buckets in the default dashboard. See: Introducing Amazon S3 Storage Lens – Organization-wide Visibility Into Object Storage
